Castelnuovo Berardenga, Tuscany

One of Italy’s most prestigious and prominent producers of natural wines.

 

Pācina is a special place with a long history. It is an old monastery from the 10th century surrounded by vineyards, olive groves, fields and wooded areas, nestled on the Chianti hills in Castelnuovo Berardenga overlooking the plain to Siena, a few km east of the town. The sense of family and history led Giovanna & Stefano to a natural approach to farming intended to preserve the heritage for future generations. In the vineyards, this means chemical free methods, but it also means the vines need to find their own balance of healthy production. In the cellar this means the use of glazed concrete fermentation tanks, indigenous yeasts and bacteria, and no temperature control. The ancient cellars are naturally cool. Stefano and Giovanna have learned that a healthy, natural environment provides fruit of exceptional character, and a heartiness that permits simplicity in the entire process. The 60ha of the estate produce beans, olive oil, grains, wine as well as pasture that isolates them from outside contamination. All the products from the farm are certified organic. The wines are characterful expressions of this very special place and amazing accompaniments to hearty dishes that include pasta, Bistecca, Ribolitta, lentils with wild boar and many more.
