
A small family estate dedicated to the classic style of Chablis.
Located in the village of Fleys, between the towns of Chablis and Tonnerre and overlooking the 1er Crus of ‘Vaucopin’, ‘Mont de Milieu’, and ‘Les Fourneaux’ Eve Grossot produces wines of beautiful texture & great minerality reflecting the famous Kimmeridgean soils of the region. The family own 18ha of vineyards, 5 of which are Chablis 1er Cru. The wines are released a year or two behind many other growers and reflect the classic style of Chablis.
Eve joined her parents in the business in 2008 and took over the entire business in 2022. A transition to sustainable, and then organic methods has taken place over the last 20 years culminating in official organic certification in 2019. Chablis is a region that lives on the very edge. Always very susceptible to spring frosts and hailstorms which can often prove disastrous. Although Eve makes classic wines, she has a relatively modern cellar, with sorting table, pneumatic presses, gravity feed, and stainless-steel fermenting tanks. Oak barrels (no more than 30% of the production) are used to enhance the fruit that underlines the saltiness of the fossilized oysters that make the region famous. Her new labels are taken from a painting done by her maternal aunt. These are delightful, true to the terroir wines, that are in high demand and as you can imagine a great accompaniment to cuisine representative of the region.
