Over the last 40 years, Cave Spring Vineyard has established itself as one of Canada’s most acclaimed wineries in the heart of Ontario’s wine country. Situated on the Beamsville Bench on the Niagara Escarpment, Cave Spring Vineyard is the first winery to achieve certification from Sustainable Winegrowing Ontario in both the vineyard and the cellars. This honour was the result of carefully considered decisions, reviewing everything they do through the lens of rigorous environmental stewardship and continually asking, “What can we do next to shrink our carbon footprint?”

 

Today, their desire to continue to experiment and push the wine industry forward remains. Winemaker Gabe Demarco collaborates with Brock University on a number of projects such as researching rootstock and clones. He has recently experimented with the first ‘concrete’ vessel created from the leftover scree of a nearby quarry, to provide texture to his white wines. After many years of trial, all of their wines are now produced using indigenous yeasts, something quite rare at scale. The mantra, less is more, is evident in all the decisions that are made. It is what they don’t do, that is as important as what they do. These are wines with character, depth and complexity, enjoyed in so many ways from a casual evening in, to outstanding fine dining.
